TASTING NOTES Vineyard InformationThis exceptional Chardonnay comes from a single vineyard located in the ultra-cool Drumborg sub-region of Henty in far south-west Victoria. The vines are planted in degraded volcanic buckshot topsoil layered over a permeable cracking red clay base, creating ideal growing conditions. The vineyard benefits from a unique climate, combining inland continental-like cool nights with the moderating influence of the nearby Great Southern Ocean. The vines are VSP trained and exhibit moderate vigour, thriving in this distinctive terroir.Growing SeasonThe 2020-2021 growing season in Henty presented significant challenges. Despite frequent rainfall and periods of cold, grey conditions, key moments such as budburst, flowering, and a remarkably cool veraison in February unfolded under highly favourable conditions. Just before harvest, the region faced monsoon-like humidity, but the season ultimately turned as summer arrived right in time for picking. These rare climatic patterns, especially the unusually cold February, may never be repeated. Throughout it all, the Chardonnays resilience shone, proving its quality even under these unique circumstances.WinemakingThe Chardonnay grapes were whole bunch pressed and allowed to settle overnight in tank. The following day, the juice was transferred to French oak barriques, with approximately 30 percent of the barrels being first use. Indigenous fermentation began naturally after two days. Throughout fermentation, careful temperature management was achieved by moving the wine in and out of a cool room to maintain a maximum fermentation temperature below 20C. The wine then rested on yeast lees for eight months, building complexity and texture. Only the best barrels were selected for blending before bottling, ensuring a wine that beautifully expresses both the vineyards provenance and the potential of the Chardonnay grape.Tasting NotesThis wine delivers a precise balance of freshness and complexity. On the nose, it offers lifted citrus, subtle stone fruit, and elegant flinty minerality. The palate is finely structured with layers of vibrant acidity, delicate oak influence, and a long, savoury finish. The texture is enhanced by its time on lees, contributing depth and creaminess without overwhelming the natural purity of the fruit.Food PairingThis Chardonnay is a versatile food companion.
